Sunday Breakfast Treat Time & Where The Heck Have I Been?

I did a few things today that I haven’t enjoyed for a few months – cooked a full set of meals for the week, enjoyed a Sunday morning omelette AND bacon… and finally got time to come back to this blog! I have a list of things I want to write that I’ve been keeping in the meantime while I’ve been too busy to actually sit down and put words together so things should turn around soon. A couple weeks ago I finished up the military training that I have been working so hard to prepare for – and none of that hard work was waster, inasmuch as it was the most physically grueling couple of weeks I’ve ever been through. I haven’t posted about it much because I like to keep this blog purely personal-capacity and leave the official side of life for when I’m on duty, but it needless to say, I feel proud of all the effort I put in… and I’ll have a lot more free time now!

Once I got back unfortunately I got very sick for a while, so that held up a return to my normal routines, including this – but I’m back to training as of this week, and cooking… well I suppose as of today.

Today’s efforts include a reprise of the Soup Weather Soup, this time with powdered mustard and a dash of balsamic vinegar, corn muffins (shh… I used a mix because I was short on time, don’t tell?), and a balsamic-glazed pork loin from a recipe my mother sent me the link to. The glaze is reducing right now and it looks great so I’m excited. Especially since 3.3lbs was the smallest pork loin my store had so I am going to be eating pork for a WHILE!  It’s good to be getting back to normal and enjoying a Sunday rest day where I actually feel like I had a chance to prepare for the week… and I hav at lest some idea what the week will bring.  It also REALLY feels good to be starting back to a regular training plan.  I’m not sure if I’ll do the CrossFit Open but I have a local competition I’d like to do for fun in May.  The Open would be fun too, to see how I compare to myself from last year, but I’m not going to join an affiliate over it.  We’ll see.

In the meantime… I realized this morning maybe I’ve decided I like leggings so much because they remind me of my gym pants?  Or just because they don’t tug on my quads… 🙂  Guess I missed those gym pants!

In other news from today: I’ve been baking my bacon for best results for a while now, but for some reason I never used the broiler (as I believe would be traditional for the bacon-in-the-oven method).  This morning I was impatient to get my goodies ready, though, and realized my oversight.  The verdict?  What was I thinking… the brouler is ten times faster!  Breakfast was delicious AND speedy.  (And easy to clean up after!)
